Champagne Cocktails

It’s been way too hot in LA lately. So we’ve been having brunch at home instead of leaving the house. We’re keeping it simple with fruit, bagels, eggs and best of all… champagne! Not just your ordinary mimosa, but we have recipes for 3 different champagne cocktails to share with you from Shaker & Spoon. Here’s what you’ll need:

  • 1/4 oz nectarine syrup
  • 3/4 oz kumquat-raspberry nectar
  • 1 sugar cube
  • 1 orange wheel
  • 1 oz bubbly

How’s how you mix the cocktail:

  • The Kumquat Whynot? is a drink that gets shaken and served in a coupe glass.
  • Add the syrup and nectar to a shaker. Fill the shaker with ice cubes and shake vigorously until shaker is ice cold (15-30 seconds).
  • Place the sugar cube into a chilled coupe (without ice) and strain the shaker’s contents over it into the coupe.Top with the bubbly.
  • To garnish, float an orange wheel on top of the drink.

How pretty is this? It’s the perfect shade of blush. This delicious bubbly cocktail has hints of kumquat, raspberry and nectarine. It’s light and crisp, perfect for Summer.

Pink Peppercorn Potion Champagne Cocktail

Here’s what you’ll need:

  • 3/4 oz pink peppercorn-strawberry syrup
  • 3/4 oz lemon juice
  • 1 dash Peychaud’s bitters
  • 3 oz bubbly

Here’s how you mix the cocktail:

  • The Pink Peppercorn Potion is a drink that gets shaken and served in a flute.
  • Add the syrup, lemon juice and bitters to a shaker. Fill the shaker with ice cubes and give it three quick back and forth shakes.
  • Add the bubbly to the shaker and then strain the contents into a champagne flute.

This syrup is to die for. It’s made with strawberries, peach white jasmine tea and pink peppercorns… so fragrant and delicious. These flavors coupled with the bubbliness of the champagne are like a party in your mouth.

Time after Thyme Champagne Cocktail

Here’s what you’ll need:

  • 1 oz grapefruit juice
  • 3/4 oz thyme-cucumber syrup
  • 3 dashes celery bitters
  • 2 oz bubbly
  • 1 hand cut grapefruit zest

Here’s how you mix the cocktail:

  • The Time After Thyme is a drink that gets stirred and then served in a rocks glass. But I used these coupe glasses instead and they work too- just use a little less ice.
  • Add the grapefruit juice, syrup and bitters to the rocks glass and give a quick stir. Fill the glass with ice cubes and add the bubbly.
  • Stir the contents of the glass again in one scooping motion, making sure the spoon hits the bottom of the glass.
  • To garnish, roll up the zest and use it to crown the drink.

I like this drink because it’s so refreshing. Love how all the flavors of cucumber, thyme and celery come together to be this light bubbly magic.
