Vegan Frosting Recipe

I love my sweet treats. Unfortunately my boyfriend Colin is allergic to dairy. So I’m always on the lookout for vegan desserts and recipes. This is my go-to recipe for vegan cream cheese frosting. It’s super easy, requires just a few ingredients, and most people I’ve served this to can’t even tell it’s vegan.

Here’s what you’ll need:

  • 1 tub of Tofutti Better Than Cream Cheese
  • 1 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • 1 sliver of earth balance butter
  • coconut milk (optional)

Agency Addicts - Vegan FrostingFirst, you’re going to start by mixing the full tub of Tofutti, powdered sugar, Earth Balance and vanilla extract together. You can get all of these ingredients at most grocery retailers, usually in the vegetarian section of the store. Earth Balance is typically found by the regular butter. FYI, you’d think you can get the Tofutti at Trader Joe’s but they stopped selling it a while back. I’ve tried other brands before and nothing else compares; others are too sweet and don’t have the tang that comes with the yummy taste of real cream cheese. The Earth Balance keeps the frosting from becoming too sweet; so if you don’t have any in your fridge, just monitor the sugar and you can get away with omitting it completely.

Agency Addicts - Vegan FrostingA trick I use to avoid lumps from forming is to allow the cream cheese to gradually soften before mixing it up.  You don’t want to nuke it in the microwave so I actually just leave the tub on top of the stove, between the burners, as my cupcakes (or whatever else) are baking in the oven. I doubt this method is Gordon Ramsey approved, but hey – it works.

Agency Addicts - Vegan FrostingOnce you’re done mixing, you can choose to add a little coconut milk (try a couple spoonfuls at a time) to the bowl if you want the frosting to drizzle. I’m making some mini cake donuts here so I don’t want the frosting to be as dense as I would like it for cupcakes. Also, I think a cup of powdered sugar is more than sufficient. But taste the frosting as you’re mixing, and if you think you’d like it sweeter, just add extra sugar in, a little at a time.

Agency Addicts - Vegan FrostingHere comes the fun part… decorating. You can divide up your vegan frosting into separate smaller bowls and add food coloring to each. A tiny drop goes a long way.
