Coconut Oatmeal

Fall is finally here! My favorite time of year… Halloween and Thanksgiving are just around the corner – I totally look forward to holidays that involve candy and carbs. Time for pumpkin everything, hot tea, chai lattes, roasted vegetables and quality time with the family. We’ve only had a couple rainy, gloomy days in California, but I’ll take it. This is when I love staying in on weekends, binge watching HGTV and cooking breakfast in my own kitchen.coconut oatmeal

The only thing I’m not too hot about Fall is how dark it is in the mornings when I get up during the week. I usually want to sleep in just a while longer, which makes getting ready for work even more of a rush. And making breakfast for myself before work is hardly ever part of the schedule. So I’ve been cooking up this warm, fluffy coconut oatmeal during the weekend, and the batch lasts me the entire week. Super convenient for work.
coconut oatmealHere’s what you need:

  • 1 cup of steel cut oat meal
  • 2 cups water
  • 4 cups of vanilla coconut milk (the vanilla flavor is usually pretty subtle, but feel free to use plain instead)
  • 2 tablespoons brown sugar
  • 2 tablespoons honey
  • Toppings: fruit, more brown sugar, and I highly recommend maple syrup

coconut oatmealPour the oatmeal into a large pot, just one cup will go a long way. Pour in 2 cups of water and only 2 cups of coconut milk. Once the oatmeal softens and most of hte liquid is cooked off, turn down the heat and add the brown sugar, honey and  last 2 cups of coconut milk. Steel cut oats take a long time to soften, so I would definitely make sure you have at least an hour to spare – and even an added 15-30 minutes if you like it extra fluffy like I do. If you cook it longer, you may want to add another cup of coconut milk, depending on how thick you like your oatmeal.   coconut oatmealI like to top my oatmeal with figs, raspberries, maple syrup and a very light sprinkle of brown sugar. A bowl of this fluffy coconut oatmeal with a cup of coffee really makes the morning feel cozy. What’s even more satisfying about this meal is that it’s healthy too. 
After I finish my hearty weekend breakfast, I pack a generous scoop into 4-5 small containers for the week.
